Jazz's Kumara and Chocolate Brownie

Utensils you will need:

Measuring spoons

Measuring cups

Blender

Wooden spoon

Baking paper

Bowl

Sieve

Baking tin

Ingredients:

1 cup cooked kumara (sweet potato), mashed

1 can black beans, drained and rinsed

¼ cup cocoa powder

½ cup maple syrup

¼ cup smooth peanut butter

¼ cup milk

2 tsp vanilla essence

1 tsp baking powder

⅓ cup chocolate chips

Let’s Cook

  1. Preheat the oven  to 180°C.

  2. Add the drained black beans, vanilla, milk and maple syrup to a blender. Blend until completely smooth.

  3. Pour the blended mixture into a large bowl. Add the mashed cooked kumara, peanut butter, cocoa powder baking powder and chocolate chips. Mix well.

  4. Stir everything together until well combined.

  5. Line a baking tin with baking paper. Pour the brownie mixture into the tin and spread evenly.

  6. Bake at 180°C for 20–25 minutes, or until the brownie is cooked through.

  7. Allow the brownie to cool completely before cutting. It will become firmer as it cools.

Slice and enjoy! 

Tips
Make sure the black beans are well drained and rinsed before blending.

For the smoothest brownies, blend the beans until there are no lumps at all.

Don’t worry if the brownie seems soft when it first comes out of the oven — it firms up as it cools.

Store in an airtight container once completely cool.
